UI color loading and guessing functions no longer depend on master() global

Now they take a masterpal() arg instead so that the dependency is explicit, to
avoid any further bugs due to not loading master(). This exposed one more place
where a loadpalette was missing, in showerror_internal.

This also cleans up some upgrade code which had been forced to temporarily load
into master()
